White Chocolate Coconut Cookies Recipe

Ingredients:

1 cup butter (stick kind)

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla

1 teaspoon honey

1 cup shredded coconut

2 cups flour

1/2 bag of white chocolate chips or chunks


Directions:
Preheat oven to 375 degrees.
Take the butter and place in a microwave-safe bowl. Heat until soft, or melted.
Add the butter, sugars, eggs, baking soda, salt, honey, and vanilla together in a large mixing bowl. Mix until well blended, perferably with an electric mixer, but a large spoon will also do. Add the coconut. Mix until blended. Then mix in the flour, one cup at a time, until blended. Then add the chocolate.

Spray a cookie sheet with non-stick cooking spray, then add a cereal spoonful of the cookie dough, arranged in 3X4 rows. Place in the oven, and cook for 9-10 minutes. The cookies will be done when their edges turn a golden-brown color. But if you want to play it safe, stick a toothpick into one of the cookies. If it comes out clean, they are done. If not, stick them back in the oven for another minute or two.

Place the cookies on a metal cooling rack, or wax paper. Wait until cool, serve with milk, and enjoy! :D Makes about 23 cookies.

Other:
~It won't hurt the recipe if you add 1 1/2 cup of coconut, or a whole bag of chocolate chips...but that's only if you want a lot of coconut or chocolate with your cookies :XD: :)
Yes, just your average everyday chocolate-chip cookie recipe with a twist ;) I found out the other day that white chocolate and coconut went really well together, and then ideas started forming in my head. What if I put them together in a cookie recipe?

I know I did not invent the original white chocolate-coconut cookie idea, but the ingredients are all made up by me (the coconut, honey, and chocolate amounts at least :XD: ) I added honey in there because...well, I add honey to almost everything. It's better than sugar! And it's natural! :XD: But I had a feeling it would work well with this recipe. You decide for yourself if that is true ;)
